He had found another job while his wife continued teaching. “The opportunity just kind of came to us,” he said. Tortured Souls had previously rented its kitchen to a caterer but felt the offerings did not suit the local community. The Wymans, owners of Tortured Souls, are excited about working with Barbiaux. They believe he will bring a loyal customer base back to the new venue. Barbiaux has a history of offering fresh, local food, and he plans to adapt his menu to focus on shareable appetizers and sandwiches. The new kitchen is set to launch, and Barbiaux aims to pair his food with the brewery's beers. He believes the Evolution name will attract customers, while the new menu will keep them coming back. The kitchen will operate during the same hours as the brewery, which is open every day of the week.
