Traditional Moldovan zacusca recipe from Mihai Viteazul
Villagers in northern Moldova are preserving a traditional zacusca recipe, a vegetable spread, passed down through generations. This recipe is considered a culinary treasure, with specific techniques and ingredients contributing to its unique flavor. The zacusca is made using a "less is more" approach with four core vegetables: peppers, eggplants, carrots, and onions. Peppers and eggplants are roasted on a hot stove, while onions are sautéed and carrots are grated, all contributing to the rich aroma.
