A study published in iScience details how a Michelin-starred chef and microbiologists recreated an ancient Bulgarian yogurt recipe using ants. The ants' acidic compounds, secreted for self-defense, promote a unique fermentation process in milk proteins, resulting in a yogurt with a mild, grassy flavor. This process requires live ants, as frozen or dried ones did not yield the same results. While the research sheds light on ancient food practices, the team does not recommend home experimentation due to regulatory issues and the risk of parasites in wild ants.
