Plant Potatoes in Autumn for a Second Harvest Before Frost

Potatoes can be planted in autumn to yield a second harvest before frost in regions with long warm falls, provided early varieties and proper timing are used. The main risk is freezing temperatures. Farmer Jim Gerritsen recommends early varieties like Yukon Gold, Purple Viking, and Dark Red Norland. Pre-sprouted tubers should be planted 10 cm deep in loose, well-drained soil with straw mulch, as cooler weather reduces pests and heat stress. Harvest when foliage yellows and dies, roughly 90 days after planting, before ground freezes. Dry tubers and store in a cool, dark, ventilated place without washing to prevent rot.
