This new dish complements the well-known Bamboo Chicken and is available at roadside eateries near tourist spots like Borra Caves. Local chefs report high demand for Bamboo Biryani during the tourist season. The dish takes about an hour to prepare and is made with traditional spices, using bamboo sourced from Odisha. Prices are set at ₹600 for Chicken Biryani and ₹450 for Vegetable Biryani. Officials are planning to provide guidance to tribal vendors on hygienic food preparation. They aim to ensure quality and safety for tourists, addressing concerns about potential foodborne illnesses.
